How to do

Rinse the pork under water tap and put it into a basket to dry. Place the pork in a pot, cover with water. Add shaoxing wine, ginger, green onion, star anise and chili pepper.

Boil the pot while covering with a lid, then uncover the lid and simmer it for up to 5 minutes.

Drain the ribs while discard the ginger, white part of green onions, star anise and chili pepper from the broth.

Whisk together black vinegar and light soy sauce to make a sauce.

Heat a skillet, stir constantly peanut oil and sugar over medium heat until the sugar is dissolved and turn pale yellow. Immediately add the pork ribs into the skillet. Keep stirring until the pork turns golden brown.

Remove the ribs from the skillet and set aside. Pour the extra oil in the skillet until it remains about 1 tbsp oil.

Turn on the medium heat, add the ribs back, pour the sauce into the skillet and constantly stir to coat the pork with the sauce. When seeing the sauce is thickened, transfer the food into a plate.

Garnish with some green onions and the soup making from the broth.
